Arrange fillets on prepared baking sheet; sprinkle with salt and pepper. Bake 12-14 minutes or until fish just begins to flake when tested with a fork.
Melt the butter in a small saucepan over medium heat. Stir in the thyme and lemon peel; cook for 1 minute. Remove from heat ; stir in parsley. Spoon butter mixture over the cod. Serve immediately.
