Potatoes cooked in butter - what could be more perfect? Not well-known in the US, these are often served in high-end restaurants in Europe. Not a quickie recipe, these will require your full attention. Perfect for fancy dinner parties, if you have the extra time.
Square potatoes lengthwise and cut off ends. Make sure all peel is removed. Slice into 2 - 3" slabs. Rinse and dry thoroughly. Melt 2 tbsp butter over medium-low heat in a heavy covered fry pan. Add potatoes flat sides down. Sprinkle with salt and pepper. After a minute or so, turn the heat down to very low and cover. For 40 minutes, baste occasionally with fat from the pan. Turn them, season Side Two and let them go for another 40 minutes. Add additional butter. If they seem to be sticking, use a thin-bladed implement to get under them. If not done, continue another 15 minutes until tender and browned. The face-up surface will no longer be crisp; remove the lid, turn them one more time and give the softened side a couple of minutes over slightly raised heat.
This is not a quick and easy recipe. It takes time and lots of attention but the end result is worth the effort.
