Perfect soup for hot humid weather or a cold winters day.

"Really good - only had shrimp, so i omitted the fish and chicken. Make sure to use enough curry and chili pepper. I added cilantro as a garnish and it was amazing!!! Adventurous husband and three year daughter old also enjoyed it."

Ingredients

vegetable oil
1 onion; very finely diced
1 capsicum; very finely diced
1 small red chilli
1 tsp curry powder
4 cloves Garlic; crushed
1 knob ginger; grated
1 stalk lemon grass; very finely diced
400 mls coconut cream
6 cups chicken stock
1 chicken breast fillet; cubed 2cm pieces
1 fillet white fish; cubed 2cm pieces
200 small prawns; peeled
2 cakes dried asian noodles
iceburg lettuce; shredded

Preparation

Heat a small amount of oil in a stock pot then gently fry the onion and capsicum for a few minutes. Push onion and caosicum to the side and add curry powder, chilli, garlic, ginger and lemongrass. Stir until fragrange is released then add a quarter of a cup of the chicken stock. Reduce. Add remaining chicken stock and bring to boil. Add noodle cakes and simmer for 5 minutes. Pour in coconut cream, bring back to simmer. Add chicken, fish and prawns, simmer 5 minutes. Place a handful of shredded lettuce in each individual serving bowl and ladel soup over the top. Enjoy!
