I don't eat squash, but i do eat this! Yep it is that good

Ingredients

Are you making this? 
6 cups yellow squash and zucchini; diced
1 vegetable oil
1 cup Onion; chopped
4 tablespoons butter
1/2 cup sour cream
1 salt
1 pepper
1/2 tsp garlic powder
1 1/2 cup cheddar cheese
1 cup Ritz cracker; crushed

Original recipe makes 6

Servings  

Preparation

oven to 350

saute squash in little veg oil over med-low heat line collander with paper towels and drain squash well.

in skillet saute onion in butter.

mix all ingredients together except crackers.

pour into buttered dish and top with cracker.

bake 25-30 minutes.

I found a nearly identical recipe early this Summer to use our garden squash. It is a HUGE hit! About the only extra thing I have added is some Italian seasoning;)
