Ready in 15 minutes
Simple way to use up leftover chicken, be it grilled or broiled. Serve on top of lettuce, in a sandwich or wrap.
Mix all ingredients together. Serve slightly chilled in a sandwich, or over lettuce for a small salad.
Optional ingredients include walnuts, raisins, sliced seedless red grapes, almonds or pecans.
stevemur 3w agoDressing is a personal choice, and can include a curry vinaigrette, or, today's option was a white-wine-vinegar/dill/mayo/salt/ground-pepper/canola-oil simple vinaigrette. Good way to use up leftover grilled chicken. Walnuts, celery, hard-boiled egg, red grapes cut in half... all good options.
bez1973 2y agoSo good! I didn't have the green onions but I did have red onions so I used that in stead. And I added some chopped green bell peppers that I had to use up. Just gave it that extra crunch. Definitely will make this again.

stevemur 4y agoA half and half mix of mayo and sour cream also works well with this recipe. Added 1 finely diced shallot.
