Ready in 15 minutes

Simple way to use up leftover chicken, be it grilled or broiled. Serve on top of lettuce, in a sandwich or wrap.


1/2 pound Chicken; grilled, broiled; cubed
2 whole Green onions; sliced
1 tablespoon Parsley; fresh; chopped
2 whole Eggs; hard boiled; chopped
salt and pepper; to taste
2 tablespoon Mayonnaise

Original recipe makes 4



Mix all ingredients together. Serve slightly chilled in a sandwich, or over lettuce for a small salad.

Optional ingredients include walnuts, raisins, sliced seedless red grapes, almonds or pecans.

So good! I didn't have the green onions but I did have red onions so I used that in stead. And I added some chopped green bell peppers that I had to use up. Just gave it that extra crunch. Definitely will make this again.

A half and half mix of mayo and sour cream also works well with this recipe. Added 1 finely diced shallot.
