Mediterranean style mussels kebab.
Preparing mussels
1) Check each mussels carefully and discard Any open ones. clean any sand, sticking hair etc. Place them into a colander to drain any water.
2) Pour a layer of (1/4 inch tick) flour into a flat oven tray.
3) Skew about 4-5 mussels onto a 6 inches long barbecue sticks immers them in flour on the tray. Once a layer is completed sprinkle enough flour to cover the skews completely and let them dry in flour about 20 mins.
4) In a frying pan, larger than the skews, heat Canola oil (coveing about 1/4 inch of the pan) and fry skews first immersing them into cold beer. Beer should completely wet the mussels. shake any excess flour before placing them in the pan. Remove them when browned and place them on paper towel before serving to absorb excess oil. Do not over cook them to avoid hardening. They should be crisp on the outside, soft in the inside.
The sauce
Grind walnuts to rough powder form. Mix them with yogurt, bread cramps, a table spoon of olive oil.
