Sloppy Joes with a difference. low fat and corn.

"I left out the corn, just because my family is really picky and were already nervous that I was making Sloppy Joe's and there weren't any Manwich cans around hahaha!

But, they did love it! And I made so much we had leftovers and no one complained about that! I was even told it was better the second day because everything got to sit and absorb the flavors more.

Ingredients

3/4 lb Lean ground beef
2 c Onion; finely chopped
1 Sweet red pepper; cored, seeded and chopped
1 ts Vegetable oil
1 clove garlic; finely chopped
1 ts Paprika
1/4 ts Ground cayenne; hot red
Pepper
1 32-oz can tomatoes drained; and chopped
2/3 c Ketchup
1/3 c Red-wine vinegar
2 tb Dark-brown sugar
1 tb Worcestershire Sauce
1 10-oz package frozen corn kernels; thawed
6 Sourdough rolls; split and toasted

Preparation

Prep: 10 minutes Cook: about 20 minutes Cost: $ 1.39 each for 6 servings 1) Cook beef, onion and sweet pepper in oil in large nonstick skillet 6 minutes. Add garlic, paprika and cayenne; cook, stirring, for 1 minute. 2) Stir tomato ketchup, vinegar, sugar and Worcestershire into skillet; cook 10 minutes. Add corn; cook 5 minutes. Spoon mixture over rolls. Nutrient Value Per Serving: 383 calories, 20 g protein, 12 g fat, 54 g carbohydrate, 943 mg sodium, 44 mg cholesterol. Notes

Great tasting dish. I think you could even get the kids to eat their corn in this dish. I had a couple fresh mushrooms left over from last nights dinner so I added them here. Also used the hot dog buns left over from the weekend. Will make this one again.
