"Finally made this tonight - pretty darn good, I did have to add a cup of heavy cream to thicken it up a bit. I also added a couple tablespoons of bacon grease to it for more flavor. We will definitely have this again, and it's very easy - adding it to a recipe binder for easy-to-make items as a housewarming gift :)"

Are you making this?
5 pounds Russet potatoes; Diced 1/2 Inch Cubes

16 ounce Cream cheese; Softened

Preparation

1.) Add potatoes, onion, garlic, seasoning, and chicken stock to slow cooker.

2.) Cook on high for 6 hours or low for 10 hours.

3.) Add the softened cream cheese and puree soup with an immersion blender until the cheese is incorporated and about half the soup is blended. (Alternately you could remove half the soup and the cream cheese to an upright blender, then re-incorporate).

Me too, finally had a chance to try this receipe. I personally didn't have to add anymore cream then the receipe suggested but I did add chopped up fried bacon to the mixture as well as the topping. Very garlicly for my taste but my wife loved it. Good enough to make it a favorite with 4 stars
