Easy and fast to put together for a busy weeknight or weekend.
Put first 7 ingredients (through pork) into slow cooker and cook on low for 6-8 hours or on high for 2-3 hours. When done, chop cilantro and stir into stew. Spoon into bowls, and top bowls with a spoon of sour cream and diced avocado. Serve with corn chips.
If you find it's too much hominy, use only half a can then freeze the rest for next time!
You could use red enchilada sauce also. If you don't have hominy or can't find it, corn will work.
