Slow Cooker Pulled Pork

Ready in 8 hours 20 minutes

This is a great recipe for those nights when everyone is running in and out to activities and eating at different times. Once the pork has been "pulled" and added to the sauce, you can hold it in the slow cooker on "low" or "warm".

1 country style boneless pork roast
2 Tbsp. Paprika
1 Tbsp. Brown sugar
1 Tbsp. coarse sea salt or kosher salt
1 Tbsp. Pepper
8 8 cloves garlic; chopped
1 c. barbecue sauce
seasonings; to taste

Original recipe makes 8 Servings

Remove netting from roast. Combine paprika, sugar, salt, pepper and garlic in bowl. Rub mixture into pork. Place roast in slow cooker. Cover and cook on low for 8 hours. Remove meat to chopping board or cookie sheet with sides. Meanwhile, place barbecue sauce in a saucepan. Skim any fat from drippings. Add drippings to barbecue sauce. Add any seasonings you like (salt, pepper, vinegar, sugar, Tabasco...) Heat through. Using 2 forks, pull pork into individual strands. Discard fat. Place pulled pork back in slow cooker. Add heated sauce and combine with meat. This can be held in slow cooker set to "low" if desired. Serve hot on kaiser rolls.
