Stuffed Pepper Soup but in Slow Cooker


2 lbs ground beef
1 medium onion; chopped
2 green peppers; chopped
2 cans diced tomatoes; undrained
1 can tomato sauce
2 teaspoon salt
1 teaspoon pepper
1 cup long grain rice; (not instant)
1/4 cup brown sugar

Original recipe makes 10 Servings



Brown the beef in a large skillet and drain off fat.

Place the cooked beef and the rest of the ingredients in a crock pot.

Add two (28 oz) cans of water and stir.

Cover and cook on low for 6-8 hours. If needed, stir in extra water before serving.

I really liked this recipe. I didn't add any water after cooking and it is very thick, but I actually like it better than if it were more of a soup consistency. Very filling and hearty. Gives you that nice Home cooked warmth in your stomach. I put the leftovers in jars and sealed them with my Foodsaver. Then you just put it in a bowl and heat it up in the microwave. makes for great leftovers.

Very good. I added 1 can beef broth and two cans water. About 7-8 dashes of Worcestershire sauce. It's a keeper.

Was a hit. I used beef broth instead of water, added some worchester and corn as well. Serve with warm fluffy biscuits so you can soak up what remains in the bowl.

I don't know if it was the brand of rice I used but this turned out a pile of mush. The taste was good but it was more like mush casserole than a soup. I was disappointed but will try again with another brand of long grain rice.

Sooo good!!!!!! I used barley instead of rice, beef broth instead of water, and cooked it stovetop. Other than that I followed the recipe exactly and I absolutely love it!!!!!

I used red, yellow, orange and green bell peppers. I also used ground turkey and added some fresh mushrooms. It was easy to make and tasted delicious!

Amazed at how good this simple recipe is! I am going to try trading the ground beef for chicken and adding a little cumin and paprika and turn it into Fajita soup! Thank you

This was a huge hit with a variety of people. I seasoned the meat as I was browning it with about a 2 tsp cumin, salt, pepper and used brown rice. I put the crock pot on high for 3 hours then low for 3...I read some people said the rice wasn't done. And it worked great. Reay reci
