1. Drain tomatoes, reserving all but 1/2 cup liquid. Put tomatoes and reserved liquid in a 5- or 6- quart slow cooker. Add beans, corn, taco seasoning, and cumin. Cover and cook until flavors are blended, 3-4 hours on high; 6-8 hours on low.
2. About 20 minutes before cooking time is up, stir in spinach. Coarsely mash bean mixture with a potato masher.
3. Spoon. 1/2 cup of bean mixture along center of each tortilla. Top with 1 tablespoon each of cheeses, salsa, sour cream, and cilantro. Roll up tortillas to enclose filling.
