Steel-cut oatmeal is a delicious creamy treat that tastes nothing like oatmeal made from regular rolled oats. Serve the oatmeal plain, or add a few raisins or currants during the last 5 minutes of cooking. You can add a pinch of cinnamon or nutmeg, too, if you wish.
1. Combine the water and salt in a medium saucepan and bring to a boil over medium-high heat. Slowly stir in the oats and return to a boil.
2. Reduce the heat to low, and simmer, uncovered, stirring occasionally, until the oats are tender, 20 to 25 minutes. Depending on how chewy you prefer your oats, you may need to add a little more water and cook them 5 to 10 minutes longer.
