Suggest a better descriptionpreheat a griddle plate or pan under the grill until both grill and griddle are hot. If you do not have a griddle, heat a heavy baking sheet or shallow roasting tin. slice the thick focaccia in half horizontally and cut the top half into strips. if using slightly thinner flatbread, leave one whole and slice the second bread into strips.
Cover the bottom half of the focaccia (or whole bread0 with basil leaves, top with the courgettes in an even layer and then cover with the chicken and ham, alternating the slices and wrinkling them. Lay the strips of focaccia on top, placing strips of taleggio cheese between them. Sprinkle with a little nutmeg if liked.
Place the assembled bread on the hot griddle and cook under the grill, well away from the heat, for about 5 minutes, until the taleggio has melted and the top of the bread is browned. Serve immediately with cherry tomatoes if liked, cutting the bread into four across the strips.
