Smoked chicken seasoned with orange juice, ginger and spices.
Prepare brine, cover chicken completely, let sit refrigerated for 2 hours. Rinse chicken & pat dry.
Mix rub ingredients together and thoroughly rub onto chicken pieces. Let sit refrigerated for 2 hours.
Combine all Mop ingredients EXCEPT cornstarch in saucepan. Bring to a gentle boil then simmer for 10 minutes. Cool to room temp (or cool in refrigerator). Strain 3/4 cup of the liquid from the mop into a spray or squirt bottle or place in cup to brush on with mop or bbq brush. Reheat remaining mop liquid to boiling, thicken with cornstarch mixed with cold water. Set aside for browning stage.
Smoke at 200-225? for approximately 3 hours. (Smoking techniques and equipment vary greatly and can effect smoking time.) Moisten chicken pieces with unthickened, strained mop every 30-45 minutes.
When chicken internal temp reaches 165?, preheat grill. Transfer chicken from smoker to hot grill (if using charcoal grill to smoke, move chicken over coals). Brush on thickened mop sauce and carefully cook chicken over direct heat to caramellize sauce and crisp skin. Be careful, sugary sauce will burn easily. When crisped to taste, remove from grill and let sit for 10-15 minutes.
Recipe will work with any cut of chicken, including whole birds. Fresher is always better. Smoking times will vary depending on size of pieces, type of smoker, technique and other variables.
