1 Egg
1 3/4 c milk
1/4 ts Black Pepper; ground
4 ts Baking Powder
2 tb Butter; melted
2 c Flour
1/4 c smoked salmon; Chopped
Topping:; sour cream; chives
2 tb thyme; Chopped, or parsley or
1 c cheddar cheese; Grated, tasty

Original recipe makes 44



Preheat oven to 400F, prepare mini muffin pans. In a bowl sift together flour & baking powder. Stir in the cheese, thyme & pepper. Beat together the egg, milk & melted butter. Make a well in the centre of dry ingredients & stir. Fold in the salmon. Spoon into mini pans & bake for 10-12 mins. Serve topped with your favourite topping. Makes 40-44 mini muffins. Variation: Omit the salmon & use lots of fresh herbs or 1/4 cup of chopped corn kernels with a little chopped ham or grilled bacon for a change. REC.FOOD.RECIPES From archives.
