Gluten-free smoked salmon on cucumber rounds with light cream cheese, red onion, and capers makes a quick and easy lunch or snack
Measure cream cheese and set aside to soften. In the meantime, mince the onion and zest the lemon and mix into the cream cheese. Set aside. With the skin on, slice the cucumber on a diagonal to get larger slices, as pictured above. Spread the cream cheese on the cucumber slices. Roll up small pieces of the smoked salmon and put on top of each cucumber slice. Arrange cucumber slices on plate, in a circle to form a flower. Add capers in the middle of the cucumber slices. Add additional minced onion between each of the cucumber slices on the plate and serve.
