Beautiful smoked turkey with field greens and hand made guiltless cheese spread.
Make ahead:
Ghost bread wrap: Separate eggs. Mix together stevia, egg yolk and cottage cheese. Mix with mixer until smooth and lemon colored. Whip egg whites until stiff, add cream of tartar. Fold all together. On cookie sheet, place piece of parchiment paper and spread egg mixture from end to end making 2-wraps. Bake on 325 degrees for 30-40 minutes until browned. Cool and place in zip lock bags.
Make wrap:
Use ghost wrap. Place cottage cheese herb spread on bread. Add 3 oz smoked turkey and all remaining ingredients. Roll up wrap and seal edge with fat free cheese mixture.
Serve with side salad or vegetables.
I make the cheese spread out of 1% cottage cheese mixed with herbs. Mix together in food processor and pour into cheese cloth to drain and solidify (Place cheese cloth wrapped cheese into a strainer basket over a bowl to drain for about 3 days).
