Soft Chewy Sugar Cookies


2 3/4 cups All purpose flour
1 tsp baking powder
1/2 tsp Salt
2 cups Sugar
2 tsp Vanilla
1 1/4 cups margarine; softened
2 large Eggs

Preheat oven to 350 degrees.

Combine flour , baking powder, and salt. Set aside. With an electric mixer, cream together batter and sugar until fluffy. Beat in eggs one at a time, then beat in vanilla. Slowly beat dry mixture into wet mixture, and refrigerate for 20+ minutes or freeze until ready to bake. Next, roll the dough into walnut sized balls. Dab each ball into sugar then slightly flatten onto an un-greased cookie sheet about 2 inches apart.

Bake in 350 degree oven for 8-10 minutes until edges are golden brown.


I usually bake these normally for about 5-6 minutes, then turn off the oven off, and turn the broiler on medium and broil them until the tops are a light golden brown, this makes them crispy on the outside and soft and chewy on the inside

I love this recipe and it makes great soft cookies! I suggest refrigeration overnight though. I take these cookies and frost them with cake frosting that I've added strawberry extract to. I started using this recipe because a loved one has false teeth and doesn't have to put their teeth in just to enjoy a cookie.
