A lighter verson of a classic dish
1. In nonstick skillet, over medium heat, cook onion, pepper and garlic in margarine until tender. Remove from heat.
2. Stir in spinach, egg beaters and bread crumbs. spread stuffing evenly over each fillet.
3. Starting at short end, roll up each fillet. Arrange, seam side down, in a greased 12 x 10x 2-inch pan. Sprinkle with lemon juice.
4. Bake at 375 degree oven for 15 to 20 minutes or until fish flakes easily when tested with a fork. Top with Hollandaise Sauce make with egg beaters.
