This easy to make recipe is made in one bowl using sour cream instead of butter. You can use spinach instead of broccoli, or leave out the ham if you prefer a vegetarian quiche, or use your imagination for a meat substitute.

Ingredients

2 cups whole milk
4 large Eggs
0.75 cup biscuit mix
4 ounces sour cream
1 cup grated Parmesan cheese
10 ounce package chopped frozen broccoli
1 cup cubed ham or meat substitute (optional)
8 ounce package shredded Cheddar cheese
2 deep dish pie shells

Original recipe makes 8 Servings

Preparation

Preheat oven to 375 degrees F (190 degrees C)

In a large bowl, beat together milk, eggs, baking mix, sour cream and Parmesan cheese.

Stir in broccoli, ham and Cheddar cheese.

Bake in preheated oven for 50 minutes or until mixture is golden brown and a toothpick comes out dry when inserted in the middle of the quiche.

I made this, the only change I made to the recipe was to use half cheddar and half parmesan cheese. The sour cream added a slightly different flavor and it was delicious and easy, will make again soon!
