Sour cream enchiladas made with beef or chicken
This was my favorite dish growing up. My mom made it for my birthday every year. It is also very simple to make. Preheat oven to 350. Brown meat. Put to side. Mix together sour cream, cream of chicken soup, olives, and green chili's. Heat up tortillas in skillet. Layer one tortilla with meat, sour cream mixture, than refried beans. Wrap tortilla up and put in baking dish. Repeat with all tortillas. Cover top of dish with remaining sour cream mixture and smother in cheese. Cook for 30-45 minutes.
