Suggest a better descriptionThe night before - Make the Sourdough starter:
1. Heat the milk on the stove top (not to boil - but to over 100 degrees)
2. Pour milk into medium bowl and sprinkle with yeast. Let stand about 5 min - until foamy.
3. Whisk in cider, brown sugar, butter (2 tbsp melted), flour (1 cup).
4. Cover with plastic wrap and let stand at room temp overnight (about 10-12 hrs)
In the morning:
1. Whisk flour (1/2 cup), egg, baking soda, baking powder and apple into the sourdough starter.
2. Heat skillet or griddle with 1 tbsp butter
3. Pour 1/4 cup batter onto griddle for each pancake.
4. Cook until tops are bubbly and the edges are set/dry looking (about 2-3 min) then flip and cook for 1-2 min more (until golden and cooked through)
5. Repeat with remaining batter - adding butter as needed.
6. Top with pecans/syrup/more butter, if desired.
Make sure you use fresh yeast - older yeast makes an unpleastant taste. Also - this would probably be good with 1/2 tsp cinnamon, nutmeg, or vanilla added. I used a Braeburn apple - but any of the tarter apples (granny smith, rome, red delicious) would probably be good.
