Light and Tasty South Beach Diet Chicken Pasta Salad
Prepare pasta according to directions. Rinse under cold water and drain. In a
large bowl, combine mayo, evaporated skim milk, mustard, sugar, salt, pepper,
and cumin; mix well. Add chicken, onion, celery, green pepper, and drained
pasta; mix well. Serve immediately.

Mialee 1y agoI prepared this for thanksgiving potluck for work and everyone loved it. I followed the original recipe and used chicken breast. So good and healthy. I'll always use this recipe. Thank you!
Jeanwgriffin 2y agoKids loved it, hubby loved it, I love it. I doubled recipe so I would have leftovers. Yikes! I now have enough to feed a football team! Original recipe serves more like 8. I used canned chicken to keep it simple. Saves well. We ate it all week. Kiddos took it to school for lunch.

smmcinnis 2y agoVery good recipe! I didn't have Dijon mustard so I used regular mustard (half of what the recipe called for) and added a 1/2 TBSP of hot sauce. I only used 1/2 cup of mayo. Will use lite mayo next time. Definitely a keeper!
tinabean2 2y agoIf I figured everything correctly, the recipe is reduced to about 552 calories by using light mayo instead of the regular. There might be some ways to reduce it further without sacrificing flavor. It made a lot and the serving size could also be reduced.
