Southwest Crockpot Chicken

Extra easy, delicious chicken recipe.

Ingredients

4 Boneless chicken breasts
1 can black beans; rinsed
1 can yellow corn
1 small jar salsa
1 package Cream cheese

Original recipe makes 4

Servings  

Preparation

Put chicken, beans, corn and salsa in crockpot on high.

Cook for 4 hours.

When chicken is done, cut cream cheese into chunks and put in crockpot. Stir until cheese is melted.

Serve. (Great with tortillas as a side!)

This is so tasty given how simple it it! The first thing I had to do, was figure out how much chicken to buy... they don't sell the stuff by breast, they sell it by pound! I settled on 1.5 pounds. The black beans come in both 15 and 19 oz cans; I personally prefer the 19 oz can, but I can't always find it. 15 oz is good too! I use 16 oz of salsa instead of a small jar. I also like throwing in an extra small can of corn. I cut the chicken breasts into chunks before putting them in the crockpot so they are easier to break apart at the end. Instead of 4 hours on high, I use 8 hours on low because I'm often away for more than 4 hours! This goes perfect on Basmati rice.

This is tasty, simple comfort food. I use 1.5 pounds of chicken, cubed and a full 16 oz jar of salsa. Black beans come in a 15 oz can and a 19 oz can - I've used both and it's fine. I serve mine on Basmati rice. You can also cook for 8 hours on low instead of 4 hours on high. I love anything with a cream cheese based sauce!
