This is a Tex-Mex lasagna, of sorts made with ground beef and corn tortillas. We serve it with sour cream, chopped green onions, and lime wedges.
1. Preheat the oven to 350 degrees. Grease an 8-inch square baking dish. Toast the tortillas in batches in a non-stick skillet over medium-high heat until the bubble and turn spotty brown, 1 to 2 minutes per side. Transfer to a plate.
2. Tear 4 of the toasted tortillas into rough pieces and transfer to a food processor. Add 1/3 cup of the broth and 1/3 cup of the tomato sauce and process until smooth. Transfer to a large bowl. Add the beef to the skillet and cook over medium-high heat until no longer pink, about 5 minutes. Drain beef, then transfer to the bowl with the tortilla puree.
3. Add the oil and the onion to the skillet and cook until softened, about 5 minutes. Stir in the garlic, chili powder, and cumin and cook until fragrant, about 30 seconds. Add the remaining tomato sauce and remaining borth to the skillet and simmer until slightly thickened, 5 to 7 minutes. Stir half of this sauce into the tortilla mixture. Stir 3/4 cup cheese, the minced jalapeno, cilantro, and hot sauce into the tortilla mixture as well.
4. Arrange 3 toasted tortillas in the bottom of the baking dish, tearing to fit in one layer. Spread the tortilla/beef mixture over the tortillas. Arrange the remaining tortillas over this layer. Top with the remaining tomato sauce. Bake until the filling bubbles around the edges, about 30 minutes. Sprinkle the remaining cheese over the hotdish and bake until the cheese is browned, 15 to 20 minutes. Let cool 20 minutes before serving.
