Spicy Southwest version of a Classic favotire.
Brown ground beef in water ( softer texture); drain and rinse with cold water. Add cooled ground beef to the grated cheese. Mix in a medium bowl.
Cook the Manicotti until soft but not tender (with tooth). Cool the manicotti in cold water. Stuff the manicotti with the beef and cheese mixture.
Cook onions and garlic until clear, add salt and pepper. stir in spagetti sauce.
Spoon a quarter inch layer of spagetti sauce into a 8 x 12 baking dish. Place stuffed manicotti on top of sauce. Pour remaining sauce over the manicotti. If any beef and cheese is left over from stuffing the manicotti, sprinkle over the top. Optional: sprinkle a bit of parmesan cheese over the top.
Bake in a 325 F oven for about 40 minutes.
Easy Meal, keeps well. Can be divided and frozen for a quick meal when there is only one or two for dinner.
