Southwest Quinoa Salad

Ingredients

1 cup quinoa; cooked and cooled
1 Avocado; peeled, diced
1/2 cup Black beans; rinsed
3/4 cup Corn kernels
1 1/2 cups bell pepper; diced
1/2 jalapeno peppers; diced
1/2 habanero; minced
2 tomatoes; diced
1 Red onion; diced
1/2 cup Cilantro; chopped
Chili Lime Vinaigrette
1/3 cup grapeseed or canola oil
3 tbsp Lime Juice
2 cloves Garlic; minced
3/4 tsp Cayenne; ground
1/4 tsp Ground cumin
1/2 tsp salt
1/2 tsp vinegar

Preparation

Rinse quinoa in cold water and drain. Place 1 cup of quinoa and 2 cups water in saucepan and bring to boil. Reduce to simmer, cover and cook for 10-15 minutes or until all water has been absorbed.

For vinaigrette - Place all vinaigrette ingredients in a jar and shake until combined or whisk in a bowl.

For salad - Put all salad ingredients into a large bowl. Drizzle with the vinaigrette and gently toss to combine.
