Heat olive oil in 10" skillet and cook chicken until done.
Add seasoning mix and water.
Stir to combine.
Simmer chicken for 5-6 minutes. Remove from skillet.
Add corn and heat until warm.
Cut lettuce and place on platter. Top with chicken, corn, salsa, cheese, tomato, onion, and sour cream.
