Southwestern Green Chili Corn Bread

This is a great twost on corn bread!


1/2 cup Butter; or margarine, softened
1/2 cup Vegetable shortening
3/4 cup Sugar
4 each Egg
1/2 cup Green chilies; diced
1 1/2 cup Creamed corn; canned
1/2 cup Cheddar cheese; shredded
1/2 cup Jack cheese; shredded
1 cup Flour
1 cup Yellow cornmeal
2 tablespoon Baking Powder
1 teaspoon Baking soda
1 teaspoon Salt

Original recipe makes 1

9" Pan  


Pre heat oven to 325 F.

1 Blend the butter, shortening and sugar until creamy.

2. Add the eggs one at a time mixing well. Add the remainder of ingredients and mix well.

3. Pur the mixture into a greased 9" square baking pan.

4. Bake at 325F for 50 to 60 minutes or untill firm in the center.

I made this today, very easy and was a big hit. Next time I will add a little more green chili for a little more kick. Thanks for posting this recipe

DELICIOUS!!! However... it spilled over the pan like crazy. I would use a bigger one next time. Maybe I used too much baking powder--it says 2 tbsp, is that supposed to be 2 tsp??
