I modified this one from a weight watchers cookbook to go with the ingredients I had on hand. It turned out great.


1/2 cup Elbow Macaroni Noodles
10 ounces Ground turkey breast
1/2 cup Onion; chopped
1/2 cup Red bell pepper; chopped
3/4 tablespoon Chili powder
1/2 teaspoon Ground cumin
2 teaspoons Italian seasoning
1/4 teaspoon Salt
2 medium Tomatoes; diced
1 Jalapeno pepper
1/2 cup Water
1/2 cup Cheddar; reduced fat

Original recipe makes 2



Cook the macaroni according to package directions omitting the salt, drain.

Meanwhile spray a large nonstick skillet with nonstick spray and set over medium heat. Add the turkey and cook breaking it up with a wooden spoon until no longer pink.

Stir in the remainder of the ingredients except the macaroni noodles and cheese. Bring to a boil and then reduce the heat and cook until the onions are soft and the flavours are blended.

Add the macaroni and the cheese. Stir to combine and serve.

I doubled the recipe, left out the jalapeños (for the kids), and used a 14 oz. can of diced tomatoes instead of fresh. Delicious!
