"This was a great easy recipe. I did not have sweet potatoes or frozen corn so I used canned corn (added at the very end) and I used white potatoes. My whole family loved it and my husband even ate it as a leftover. I will defiantly make this again. I will try it with the sweet potatoes next time. "

Ingredients

3/4 pounds uncooked boneless, skinless chicken breast; cut
2 medium sweet potatoes; peeled (cut into 1-inch cubes)
1 large Onion; chopped
29 ounces diced tomatoes; salsa style with chiles, undrained
14 ounces fat-free chicken broth
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1 cups frozen corn kernels; not thawed

Preparation

1. Mix chicken, potatoes, onion, tomatoes, broth, oregano and cumin in a 4-quart or larger slow cooker.

2. Cover and cook on low-heat setting for at least 6 hours.

3. Stir in corn; cover and cook on high-heat setting until chicken is no longer pink in the center and vegetables are tender, about 30 minutes.

Made this exactly as the recipe says, and it seemed...ok. Added some crushed garlic as another reviewer suggested, and let it simmer longer, seems more flavorful. Perhaps when I heat the leftovers I'll also thicken the liquid to make it even more of a stew vs soupy.

Kind of bland as is. I added fresh garlic, garlic powder, salt, and onion powder. I served it over brown rice.

Delicious. I added some taco seasoning and brown sugar. I also used mild salsa instead of diced tomatos. Quick and Easy. Family loves it!
