Ingredients

500 g lean minced beef
2 400-gram cans chopped tomatoes
250 grams stick chorizo; (chopped into small cubes)
187.5 ml red wine
150 ml beef stock
2 tablespoons tomato purée
1 large onion; (finely chopped)
3 carrots; (finely chopped)
3 sticks celery; (finely chopped)
4 cloves garlic; (finely chopped)
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon salt
1 teaspoon pepper
1 Olive oil
Parmesan cheese; (grated)

Preparation

Heat oil in a pan on a low heat and add the chorizo for a minute or two until the oil turns a red colour then add the onion, carrots and celery and cook for 5 - 10 minutes until soft.

Add the lean minced beef and cook until browned.

Add chopped tomatoes, wine, beef stock, tomato purée, basil, oregano, salt and pepper.

Mix well and simmer gently for 1 hour and a half, stirring occasionally, until excess liquid has reduced.

Serve with spaghetti or tagliatelle and a generous sprinkling of Parmesan cheese.

Found it easy to make and delicious to eat. Had to make it child-friendly so I swapped the red wine to Worcester Sauce. Fantastic recipe that scored me a win at home.

It was delicious! I found that 50-60 mins is enough time for the dish. I will also try spicy chorizo next time and add 50ml more of the wine. Its good to put fresh parsley on the top to decorate x
