A really good sub-200 calorie meal with one of natures 'superfoods'. Recipe serves 2.
Directions:
SQUASH:
Preheat oven to 375 degrees
Mix enough Johnny's seasoning with the EVO to form a paste
Cut the squash lengthwise and remove seeds
Brush the EVO/Seasoning paste over both cut sides of the squash
Place seasoned squash cut-side down on a baking sheet
Bake for 40 minutes, or until a fork slides into (skin side) easily
MEATBALLS
Heat a small saucepan to 175 degrees
Add Marinara, Hoisin, and Meatballs to the saucepan
Cover and heat thoroughly, about 20 minutes at 175 degrees
FINAL PREP
Using a plain dinner fork, 'scoop' the spaghetti squash onto plates (we used only half of the squash)
Top with meatballs (4 each) and sauce
Sprinkle the grated Romano over the top
Salt and pepper to taste
We served this with a small 'side salad' for a complete and healthy meal.
