Leaner more Low-carb replacement for your typical spaghetti and meatballs
Spaghetti Squash
-------------------------
1) Preheat ove to 350
2) Slice Spaghetti Squash in half
3) scrape out all seeds and loose scraps in the middle of both pieces of squash
4) Season with salt and pepper if you like
5) Place both pieces in baking pan, face down, with a little bit of water in the bottom of the pan.
6) Place pan in oven. It will take about 45 minutes to cook, but I set the timer for 25 minutes while I prep the meatballs, and then cook the meatballs in the oven as well for the last 20 minutes that the squash is cooking.
Meatballs
---------------
1) Mix the grated zucchini, the crushed triscuits, turkey, egg, salt, pepper, half the garlic and half the onions, and half the garlic
2) Form meatballs and place on aluminum foil on a baking sheet
3) Place in oven for 20 minutes
Sauce
--------------
1) Heat up skillet on medium heat with oil (about 1 Tbsp)
2) Add last half of onions and garlic
3) Add crushed tomatoes
4) Stir often to thicken
5) Add chopped basil
6) Stir / cook for a few minutes
- Once squash is done, scoop squash out with fork into strainer (as it has high water content and you'll wanna get rid of the water)
- Mix Sauce with Squash and meatballs (or serve meatballs on top separately)
- Grate some pecorino or parmesean cheese on top
