Spaghetti Squash
This is a great pasta alternative.
Just wash the whole squash, poke holes into the skin with a fork and microwave until its soft to the touch (10-14 minutes depending on size).
When it’s cool enough to handle, cut open and remove seeds.
Separate strands by running a fork through in the "from stem to stern" direction.
Top with pasta sauce and Parmesan cheese..
