Ready in 20 minutes
Inspired by a recipe from Rachel Ray called Cowboy Spaghetti, this is a quick, low-fat, vegetarian meal.
Cook spaghetti according to package instructions in salted water. Meanwhile, sauté onions, bell pepper, and garlic in olive oil until peppers are softened. Add beans and tomatoes, bring to a simmer. Add smoke, pepper flakes, Worchestershire sauce, Tobasco, and tomato paste. Stir and simmer for 5 minutes. Serve sauce over pasta, topping with cheddar and parsley.
