How about a quick pasta dish that is healthy and meatless, not to mention quite tasty?
Generously drizzle a large frying pan with olive oil. Saute onions over medium low heat til soft but not brown, 5 to 10 minutes.
Stir in garlic and basil and cook another minute or so. Add tomatoes, balsamic and pasta water. Cover and simmer 15 minutes. Taste and adjust as desired with salt and pepper.
I served the pasta with sauce and toasted crusty bread.
Drizzle with additional oil if desired.
