clam pasta
Wash clams very well under cold water.
Add olive oil in a heavy bottom pan over medium heat.
Add garlic and red pepper, cook for about 1 minute, add clams, stirring frequently.
After one minute add wine, cover pan and allow to cook for about 4 minutes or until clams have opened.
As clams are cooking, cook spaghettini in lightly salted water until al dente, about seven minutes.
When clams have opened, remove clams with slotted spoon and keep warm.
In juice at bottom of pan, add parsley and stir in butter.
Check seasoning with a little salt and a generous amount of fresh pepper.
Drain pasta well and toss in pan with sauce.
Place pasta on a plate, topping with cooked clams.
Serve immediately.
also works well with linguini or angel hair pasta. serve with garlic bread!
