Simple paella style dish, make in a few minutes in a single pan. -- Whole family loves this.
1. In a large skillet, stir together rice mix, the water, butter, and hot pepper sauce. Bring to boiling; reduce heat. Cover and simmer for five minutes.
2. Stir in shrimp and scallops into rice mixture. Return to boiling; reduce heat. Cover and simmer for 2 to 3 minutes more or until shrimp is opaque. Remove from heat. Stir in peas. Cover and let stand for 10 minutes. Sprinkle top with tomato. Serve.
If you want to add more vegetables in addition to peas, consider chopped carrots or onions added with the shrimp and scallops, but that may not be as "Spanish" as the recipe now stands.
You might also try adding other seafood - chunks of firm white fish, mussels, clams, etc. - although I have not tried those.
