A tasty rice with crispy onions. Ideal for Indian meals
Pour 2 pints water over rice and leave for 30 minutes. Drain. Heat oil in saucepan and fry onions until crispy. Add the rice, green chilli, garlic and garam masala, stir and then add the stock and bring to the boil. Turn heat down to lowest setting. Cover with a tight lid and leave for 25 mins. Check after about 20 minutes, but do not be tempted to stir or the rice will become sticky.
