Preheat grill to medium-high heat.
Combine seasoning and salt; set aside 1/4 teaspoon seasoning mixture. Rub remain seasoning mixture over steak. Place steak on the grill rack coated with cooking spray; grill 5 minutes on each side or until desired degree of doneness. Let stand 5 minutes. Cut steak diagonally across grain into thin slices.
While steak stands, heat oil in a large skillet over medium-high heat. Add peaches, scallions, cilantro, and reserved 1/4 teaspoon seasoning mixture to pan. Cook 4 minutes or until peaches are tender, stirring occasionally. Spoon peach mixture over steak, and serve immediately. Serves 8 (serving size: 3 ounces steak and 1/4 cup peach mixture).
Note: This serves 8. To have it serve 4, reserve half of steak for another dish (perhaps with mashed potatoes). Then make only half of the peach salsa.
