Ingredients

3 14.5-oz can chicken broth; (14 1/2 ounce cans)
3 cups Rice; cooked
2 southwestern chicken strips; (6 ounce packages) fully cooked and diced
1 16-oz can V8 vegetable juice; (16 ounce can)
1 15.25-oz can whole kernel corn; (15 1/4 ounce can) undrained
1 1/2 cups salsa
1 4-oz can diced green chilies; (4 ounce can) undrained
1/2 cup green onion; chopped
2 tablespoons fresh cilantro; minced
TOPPINGS
4-cheese Mexican blend cheese; shredded
chopped green onion; additional
fresh cilantro; minced
tortilla chips; crushed

Preparation

1In a large pot, combine first 9 ingredients. Bring to boil. Reduce heat; cover and simmer for 15 minutes or until heated through.

2Garnish with toppings.
