A traditional dish with a spicy kick. This recipe makes plenty of extra 'gravy', so add more chicken if you like. My favorite way to eat this is served over rice.
Pre-heat oven to 350. Generously coat a 3-qt. casserole dish with non-stick cooking spray.
Cut the chicken breasts in half long-ways and lay in the casserole dish. Leave some room in between pieces. Separate the onion pieces and spread over the top of the chicken.
Combine all other ingredients in a large mixing bowl and whisk to combine well. Dump the mixture over the chicken and onion and spread as necessary to evenly cover.
Cover with foil. Bake on center rack at 350 for 1 hour, or until chicken is cooked through.
Let cool for 5 minutes and serve.
This recipe makes plenty of extra 'gravy' so use as much chicken as will fit in your dish, if you like. Leave out the jalapeno if you can't take the heat. The sour cream adds a slight tanginess I enjoy, but you can leave it out if you want a more traditional version of this dish.
