Ingredients

3 tablespoons extra virgin olive oil
4 cloves garlic; sliced thin
2 bay leaves
0.25 teaspoon dried red pepper flakes
50 large shrimp; (2 pounds- 21/25 count)
3 tablespoons dry sherry
1 fresh lemon; cut in half and juiced
2 tablespoons Chopped fresh parsley

Preparation

In a large frying pan, heat the oil over medium heat. Add the garlic, bay leaves and red-pepper flakes and cook for 3 minutes, stirring occasionally.

Raise the heat to high and add the shrimp to the pan and stir to combine. Cook quickly, stirring until the shrimp are done, 4 to 5 minutes. Do not overcook or shrimp become tough and chewy. Stir in the sherry, lemon juice, and parsley, heat through for one minute and serve immediately.

A good dish in a pinch, but if I were to try making this again, I might use less (or no) lemon.
