Suggest a better description1. Bring a large pot of salted water to a boil. Add the potatoes and cook until fork-tender, ~20 min; drain. Let stand until cool and cut into 1/2 inch pieces. Transfer to a large bowl.
2. Whisk the zest and juice of orange, chipolata and cumin. Toss the potatoes with orange mixture; let sit for 5 minutes. Stir in cilantro into the mayonnaise before folding in. Sprinkle with more cilantro.
