Suggest a better description1. Heat olive oil and saute onion 5-6 min. Add sausage, raise heat to med high, and cook, stirring and breaking up the sausage till lightly browned and broken into small 1 in pieces, 5-6 min.
2. Add garlic and cook 1 minute, then stir in beans. Add escarole in batches, using tongs, toss with the sausage mixture to wilt escarole and make room for more.
3. When all escarole is in, ad broth, cover pot and cook about 8 min. Season with vinegar and salt. Sprinkle cheese on each portion.
