It may seem like a strange combo but it works!
Heat oil in pot or dutch oven over medium-high heat. Add onion, garlic, peppers, and carrot and cook, stirring frequently, until vegetables are tender. Add sweet potato and corn. Add tomatoes and juice to soup. Stir in broth, water, and spices. Heat to a boil, reduce heat and simmer about 20 mins or until sweet potatoes are tender. Stir in beans and cook 5 mins.
