Our Welsh friends gave us this excellent recipe!
1. In a large sauce pan heat the olice oil, addonions cook until translucent, add leeks, garlic, spinach, finish with parmesan cheese and heavy cream. Set aside for building the pie.
2. Combine ricotta, blue cheese, and parsley together and set aside.
3. Prebake 2 sets of 10 phyllo in a preheated oven at 350?, until golden brown.
4. Grease a baking pan then place first set of prebaked phyllo down on the bottom of the pan.
5. Top with spinach and leek mixture.
6. Place the other prebaked phyllo on top.
7. Top with ricotta mix.
8. Finish with a layer of raw phyllo dough and brush with melted butter.
9. Bake for 30 minutes unti golden brown.
