This recipe was a staple in the Jay and Martha Newlon household, and then in the Tom and Linda Newlon household when their kids were young. Healthy and delicious, it was a favorite of Laura and Lindsay.
Preheat oven to 375.
Beat eggs, add flour and beat together until smooth.
Mix spinach, cottage cheese, cheddar cheese, onion, and salt into egg mixture. Blend together.
Pour into a greased casserole dish.
Optional: mix together wheat germ and melted butter, and spread over top of spinach mixture.
Bake until set and toothpick comes out fairly clean, about 40 minutes.
